The most valuable recipe of the trip our trip to Mexico and our cooking adventures with Martine was this. The best we had all week (and we had a lot.) I can't believe I didn't think of this.

Genius Guacamole
Mash avocados, lime juice, salt and pepper, finely chopped onions and tomatoes and .... shredded Parmesan Cheese!!!
